The grapes are harvested in openwork boxes, by terroir. Each plot is identified according to the soil.

The rigorous selection of the Master of Chai and Oenologist begins in August. On a regular basis, the grapes are tasted, observed and analysed; thus, the harvest only takes place at full materiality, allowing the grains to give the best of each terroir.
